British consumers typically go for Large and Extra large eggs on the supermarket shelf and as 95% of all eggs consumed in the UK go through the big retailers this leaves an imbalance in the market.

Hens naturally lay a range of sizes and this creates problems for egg producers as what to do with all the medium and smaller sizes that are produced. About 13billion eggs are eaten in Britain every year and the British Free Range Producers Retailers says that shoppers prefer to buy large or very large eggs rather than medium or mixed weight boxes.

The resulting supply imbalance is exacerbated in years such as 2018 when hot weather leads to hens eating less food, leaving them laying eggs which are graded as medium.
